My approach to packing school lunches is maximum protein/veg/fats. They’re essentially captive at school and can’t complain to anyone who cares, so why not make it the most solid meal in terms of nutrient-delivery? It makes me feel more chill about what they’re eating at breakfast and dinner. Proteins for us are often leftover meat/fish from dinner, smoked salmon, salami, prosciutto, hard boiled eggs, a cheesey omelette cut into strips. The whole 5 compartment box might look like: smoked salmon, cucumber slices, sweet potato, Greek yogurt (in one of the little lidded containers from lunchbots), and some fruit.
